Mesa Squash Fry with Sunflower Seeds - also called Calabacitas

Ingredients

1 green New Meciso or Anaheim chili
2 tablespoons sunflower oil
2 cloves garlic, finely chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
8 ears sweet yellow corn, kernals cut from the cob
4 small zucchini, cut into 2-inch long julienne
4 yellow squart, cut into 2-inch julienne
1 red bell pepper, seeded, deveined and diced
1/4 cup shelled sunflower seeds
 

Directions

Roast the chile, then peel, seed and coarsely chop it.Heat the oil over medium-high heat in a saute pan. When the oil is hot but not smoking add the garlic, chile, salt and black pepper. Cook for 1-2 minutes, stirring constantly to allow the flavors to blend.Add the corn, zucchini, squash and red bell pepper. Decrease the heat and allow the vegetbales to simmer for about 10 minutes until they are tender.Add the sunflower seeds and simmer for anothr 5 minutes.Serve hot. Serves 6 - 8.
